The Non-Negotiables

Three rules that apply to every method

Water temp: 90–96°C

Boiling (100°C) burns light roasts. Under 90°C under-extracts. 90–96°C is correct for nearly every method. No thermometer? Bring to boil, sit off heat 30 seconds.

Filtered Water

Coffee is ~98% water. Tap water minerals compete with extraction and flatten the flavor profile. A $15 Brita makes a noticeable difference. Do it once.

Grind Fresh

Coffee oxidizes within minutes of grinding. Whole bean stays fresh for weeks; pre-ground goes stale in days. A blade grinder is fine. Just grind right before brewing.
