FRENCH PRESS

Full body. No filter. No apologies.

Immersion means coffee and water together for the full steep time. No paper filter — the oils stay in the cup. That’s where the body comes from. Brazil is built for this: nutty, chocolatey, low acidity. It stays smooth through full contact time instead of going harsh. Coarse grind is non-negotiable.

What You Need

Gear

  • French press (any size)
  • Coarse-ground coffee
  • Scale
  • Kettle
  • Timer

  • A gooseneck kettle (unnecessary here)
  • A scale if you’re using tablespoons

Grind

Coarse, like rough sea salt. If you grind too fine, you’ll get sludge at the bottom and over-extracted bitterness. Coarse is non-negotiable.

Dark roasts need a bit more heat. Start at 96°C — French press cools slightly as it brews and the glass vessel dissipates heat. Start hot.

Step by Step

How to Brew

Preheat the press with hot water, then dump.

Cold glass drops your brew temp fast. Preheating keeps it stable.

Add 30g coarse grounds. Level the bed.

Even saturation starts here.

Pour all 450g water in one go. Give it one gentle stir.

Unlike pour over, all grounds get saturated immediately. One stir — not more.

Place the lid on, plunger up. Don’t press yet.

The lid keeps heat in. Pressing early forces fines through the filter.

Press the plunger slow and steady over ~30 seconds.

Fast pressing forces fines through. Slow, even pressure keeps them out.

Pour immediately. Don’t let it sit in the press.

Coffee continues extracting with the grounds. Letting it sit = over-extracted and bitter.
